Manzanilla sherry is a rare style of [ingredient=sherry sherry] that only comes from the village of Sanlucar de Barrameda, in the "Sherry Triangle". Manzanilla is a subtype of [ingredient=fino-sherry fino] sherry, and is made in the same way. The major difference between the two is that wines aged in Sanlucar de Barrameda have a good chance of developing a flor based on the yeast S. Beticus. 

Manzanilla sherry has its own Denominacion de Origen (D.O)  status from the Spanish government - they can legally be labeled as "Manzanilla de Sanlucar de Barrameda D.O.", or simply as Manzanilla from the D.O. of Jerez.

Manzanilla sherries that are aged for a longer time than is usual are called Manzanilla Pasada. Manzanilla sherries can be successfully paired with salty foods like almonds or olives or cured meats.
